Restaurant Grand Opening: Fergie Carey And Partners Presents The Fairview In Fairmount

Restaurant veterans Fergie Carey and Shane Dodd, along with bartender and DJ Dave Dollinger, are proud to announce their newest concept, The Fairview, opening Thursday, January 16, 2020 in the Fairmount neighborhood. Residing in the former Belgian Café, this completely re-imagined space features a bright and airy interior, funky and comfortable design elements, and an outstanding menu with comfort food sure to please carnivores and vegans alike. Executive Chef Beth Fox, formerly of St. Benjamin’s Brewing Company and Rogue, is excited to bring an “American Melting Pot” style to the Fairview menu. Highlights include the Pho French Dip, Vegan Green Chile Cheeseburger Empanadas, and Tikka Masala Flatbread. At the bar, look for an approachable and affordable wine program, both high end and macro beer choices, and exciting twists on classic cocktails. 

Opening hours are Sunday–Thursday, from 11:30 am—midnight, and Friday & Saturday from 11:30 am—2 am, with brunch being served Saturday and Sunday from 10 am—3:30 pm. Happy hour will run Monday through Friday from 5-7pm with excellent food and drink specials, and a DJ will be spinning on Friday and Saturday nights. “We wanted it to be so different from The Belgian Café,” said co-owner Fergie Carey. “We wanted it to be bright and open. As much as I loved The Belgian Cafe I wanted a big change. I want you to walk in to The Fairview and not realize it was the same place. I believe we have achieved that.”

CHEF

The Fairview is proud to introduce Executive Chef Beth Fox, formerly of St. Benjamin’s Brewing Company and Rogue. Describing her cooking specialty as “American Melting Pot, Chef was excited to work at the Fairview, and “loved that the people opening it were old garde restaurant and bar people.”

Though The Fairview boasts a menu sure to please carnivores, vegans will also be thrilled with Chef’s offerings. “Vegan cooking is FUN,” said Fox. “People still have this misconception that vegan food tastes like cardboard or it’s just a salad. Just because something is vegan doesn’t mean it’s necessarily healthy or bland.”

When asked why they chose to partner with Chef Fox, the answer came quickly. “It was simple,” said Carey. “I loved her food from the minute I tried it. She was the perfect fit for what we wanted. It is a bonus that she is also one of the most talented vegan chefs in the region. Come for your carnivorous comfort food, but don’t miss her vegan surprises. They will sneak up on you.”

FOOD

Departing from your usual gastropub menu, The Fairview will offer twists on classic comfort food items while also providing exciting new dishes to try. The menu is broken down into dinner, sandwiches, small plates & bar snacks, salads and sides. Highlights include:

·        Tikka masala flatbread with cauliflower, chicken, or chicken-fried seitan.

·        Pan seared pork chop with jalapeno cheesy grits, smoked broccoli rabe, red chile gravy.

·        Pho french dip with braised beef, mushroom pate, pho fixin’s

·        Vegan green chile cheeseburger empanadas with special sauce

DRINKS

The Fairview presents an approachable, affordable and enticing drink menu, including wine, beer and cocktails.The partners want the Fairview to be an every person’s bar and a staple in the neighborhood. Come as you are after a long day at the office, or drop by from your home and meet up with friends and neighbors. Carey said, “We want our neighbors to find a home away from home, where they can enjoy Chef’s amazing cuisine, grab a good, well made cocktail and create memories in a casual atmosphere.”

The Fairview’s beer program will feature high end and macro beers, with 12 drafts, and 25 cans, bottles, beer, ciders, and seltzers, with a variety of options sure to please every guest.

VIBE

In a “massive departure” for Carey, the owners hired Raymond Haldeman for what they call a “funky and comfortable” design.

“We wanted it to be so different from The Belgian Café,” said Carey. “We wanted it to be bright and open. As much as I loved The Belgian Cafe I wanted a big change. I want you to walk in to The Fairview and not realize it was the same place. I believe we have achieved that. We demolished the office that was separating the bar and the dining room and put in matching beams in the dining room to join both rooms. We wanted bright and airy and we got it. We put a window in the bar area and have design elements with funky lights in both rooms.”

ENTERTAINMENT

Co-owner Dave Dollinger will also be providing DJ services at The Fairview on Friday and Saturday nights. The restaurant location is perfect for the culturally curious with Eastern State Penetentiary, The Barnes, The PMA, The Rodin and more only blocks away.
